Pommes De Vie a la Mode
Serves 4-6
Imagine this dramatic flaming dessert with a scoop of Strafford Creamery Vanilla Ice Cream. You will love its’ flavor of a sophisticated tart without the added hassle, preparation time or calories of a crust.
4-6 Firm local organic apples such as Jonagold, Northern Spy or Cortlands
Juice of 1 lemon
4 tablespoons sugar
2 tablespoons unsalted butter
1/3 cup Maple syrup (cooking grade has more flavor)
3 tablespoons ‘Pomme de Vie’ Vermont Apple Brandy
Preheat broiler.
Peel, core and cut apples into fat 1/4-inch thick slices, cover with lemon juice and half the sugar.
Place the butter on a heavy cookie sheet or shallow baking pan in the warm oven to melt. Place the apples on the coated surface in a single layer and broil approximately 6 inches from the flames until the apples are golden for about 7 to 10 minutes. Sprinkle on remaining sugar and broil until the edges are just beginning to darken or slightly char.
Meanwhile bring the maple syrup to a boil adding the brandy for 3 minutes
Serve hot apples with the sauce accompanied by vanilla ice cream.
